Kale, Caramelized Onion, and Pumpkin Vegan Pizza
Last night I made kale and caramelized onion pizza, instead of tomato sauce I used pumpkin puree with some nutmeg, cinnamon and a bit of brown sugar. The sweet pumpkin with the savory kale was amazing.

It’s amazing how much physical fitness you loose by not going to the gym for 6 weeks. But, I went today…hopefully I can keep it up.

To Weigh or Not To Weigh
You may have noticed that I have not posted a weigh in for a couple of weeks.  Well the last time I posted my weight I received a message from my brother in law Al, a friend and Bikram Yoga Instructor, that said “Throw that scale away and just live healthy!”  My initial thought was, yea right, I wish.  The idea kept coming back to me though. This journey of mine is about more than...

Tofu Scramble With Cheezy Sauce
For dinner last night I made a tofu scramble with a whole lot of veggies.  Michelle suggested we make a cheezy sauce from the Veganomicon (one of our favorite cook books) to put over the top.  It was delicious. This high protein meal included tofu, carrots, broccoli, peas, russet potatoes, a green pepper, and diced onions.  I started with frying the potatoes, carrots and onions in about a...

A Changing of Perspective
My perspective on working out has been changing quite a bit as of late.  I have officially had 10 personal training sessions.  With only 2 more sessions left I am kinda sad that I will not be working out with Beth one on one anymore.  I am optimistic that I will be able to continue working out at least 3 days a week and I might even do one of her boot camps that she offers.  What Beth has taught...

Coconut Crusted Tofu
I had a moment of inspiration last night.  After peering into our fridge last night I discovered some Tofu and I decided to us it.  Now, I have the tendency to season with the same herbs and spices so that everything sort of tastes the same, well not last night.  I made Coconut Crusted Tofu and it was amazing. You wanna know how I made it don’t ya?  Well it is surprisingly easy and pretty...

Weigh In, 1/21/2011
I got on the scale this morning and it said 249, I have lost a little over 1 pound in the past week.  This was a bit surprising, I didn’t think I did that well this week.  It’s hard looking back to the first time I dropped below 250 and how exciting it was, I didn’t think I would be here again.  But, I am moving forward, I’m gonna keep loosing and continue to be positive. ...

Weigh In, 1/14/2011
I guess it’s time I fess up and explain why I have not been putting any weigh ins on the site in a while.  After making a conscious decision to take a break over the Holidays I got home from vacation and I weighed 258, I was ashamed. I let myself go and I shouldn’t have.  Every new day is an opportunity for becoming healthier and I made a lot of poor decisions concerning food over the...

Boston Organics Dogma Box
I posted this photo a couple of days ago letting everyone know that we got our first box of organic produce from Boston Organics and boy are we happy with it so far.  Let me tell you a little about the type of box that we are recieving, it’s called the Dogma Box. According to Boston Organic’s website the Dogma Box “includes produce sourced as close to Boston as possible....

Excitement!
I am so excited about some things going on in my life right now and I would like to share them with you. After having officially finished three personal training with nine more to go I am so happy with it.  I am proud of myself for keeping up with it and I am so thankful Michelle decided to give this gift to me.  Obviously I can’t expect my body to look different after only one week of...

Personal Training Revisited
This is what I looked like after my second personal training session.  I was sore all over and wanted nothing more than to just lay in one position for the rest of the night.  Even though I was exhausted I was really proud of myself. Heading to the gym last night I was a bit concerned because there was still a lot of soreness from my previous workout.  It didn’t matter though, I even got...

2011 Has Begun
I have already started this new year off with a bang.  While I may of drank too much and eaten too much over this past holiday season I am making some very important steps to getting back on track.  On the first Monday of 2011 I had an appointment with a personal trainer, my first of 12.  These 12 appointments are a gift from my wonderful wife Michelle.  For the next 6 weeks I will be getting my...

Weigh In, 12/3/2010
Thanksgiving did a number on me.  For quite a few weeks now my weight has remained pretty stable around 243 and I was content with that for a couple of reasons.  Today though I weighed in at 248.4, I am not content with this.  248 is dangerously close (I know 243 kinda is too) to my first big goal of 250. Over the years I have become quite an expert at being able to ignore certain problems; like...

True Bistro
Michelle and I had a chance to get brunch at a brand new vegan place in Teele Square, Somerville this past weekend.  It’s called True Bistro and it’s safe to say that we finally have decent upscale vegan dining in the Boston area, thank god. The decor is simple, but elegant.  Black and white are the primary colors that will greet you as you walk in.  We were there around noon on a...

Weigh In, 11/19/2010
This morning I weighed in at 243.8 not much change from a couple of weeks ago.  I may be a little too optimistic for my own good but I’m kinda happy that I have stayed at 243 for some time now. Unfortunately staying at 243 is not my current goal though that would be nice.  My goal for now is to weigh 199 pounds and if I am going to get there I need to get to work, I need to find motivation,...

Cardiac Screening
Yesterday my work offered free screenings to check cardiac health so I signed up.  They took my blood pressure, pricked my finger, tested my blood glucose, HDL, and total cholesterol.  I already knew my BMI was too high but that came in at 35.9, pretty squarely in the obese category, according to the person helping me I need to get to 169 pounds to be normal, seems pretty daunting. ...

Boston Vegetarian Food Festival
This past Halloween weekend Michelle and I took some time to go to the annual Boston Vegetarian Food Festival.  We missed it last year for the first time we have lived in the Boston area and made it a point to go this year.  This is the second year that they have spread the event over 2 days.  Previously it has only been 1 day and it was crazy, so many people that it was literally hard to walk....

Weigh In, 10/29/2010
I tweeted last night that when I weighed myself this morning I would have gained weight.  After all I ate out quite a bit this week and was not always in control of what I was eating.  But, I did do some calorie counting and I have not had any soda this week, just all water all the time. So, what did the scale say this morning?  243.2, that’s right a whole .6 pounds less than last week.  I...

Weigh In, 10/22/2010
The last time I stepped on a scale it was the beginning of September and I weighed in at 234.2 pounds.  When I got up this morning to get on the scale for the first time in over a month I was more than a little worried.  I was worried that I had undone a lot of the workouts and disciple in a little under a month.  Well, I weighed 243.8 this morning.  I gained a little under 10 pounds. My biggest...

I'm Coming Back
It’s been almost a month since my last post and that was just a picture of a gym visit.  After ending my September raw food thing early I went through kind of a bad period with food.  It backfired, I was too rigid and I was too constrained and when I admitted to myself that I could not do it for a full month I broke down and started eating with reckless abandon.  I would go on binges when I...

A Vegan Friendly Mom
My Mom is visiting us this weekend from Maryland and we are so excited to have her. There are a lot of stories of people who choose to go vegan only to be met with disapproval from their family.  Well, not my Mom.  Literally 4 days after I became vegan over 3 years ago she was going to be visiting for the weekend.  Every visit from my mom comes bundled with some kind of food, usually baked goods....

My High Raw Experiment Has Ended
I decided to end my month of raw food yesterday, only halfway trough the month.  It’s a little bit disappointing but I am comfortable with my decision for a couple of reasons. First, let me explain why I have decided to end this experiment.  There was a serious lack of preparation on my part, but this is not really a surprise to me.  I like to improvise in the kitchen when I am preparing...

Labor Day Weekend
With the passing of Labor Day 2010 it is the unofficial end of another summer, much to the dismay of teachers everywhere.  What a beautiful weekend it was though.  I continued to practice my raw food experiment with some adjustments, hey I can make adjustments it’s my experiment.  I’ve decided that during the week I will eat High Raw and on the weekends I will open it up to eat some...

Day 2 of my Raw Food Month
Yesterday, September 2nd, 2010, was my second full day of eating High Raw for a month and it started off great.  For breakfast and lunch I had a green smoothie of two apples, a banana, blueberries, and a whole head of romaine, it was delicious.  I discovered when I ate raw for a week is that it is very important to have some raw snacks available, you know for snacking.  You could cut up things...

Yesterday's Raw Food Meals
Even though yesterday was a little hard at the start in the end it turned out awesome.  For lunch I made it to the salad bar in the cafeteria here at the Boston Medical Center where they actually use (according to them) local foods that are picked the day before.  I had a lunch of cucumbers, cherry tomatoes, carrots and a banana.  Surprisingly, it kept me pretty full for the rest of the day, along...

Smoked Tofu
Considering that beginning on September 1st I was gonna try and eat mostly raw foods for a full month, I went a little crazy on the last weekend in August and went in the opposite direction.  One of the things I did was smoke tofu.  I had never smoked anything before so this was quite a fun experiment, and tasty I might add.  I found wood chips at our local grocery store and per the instructions...

First Day of Raw Foods
So today is officially my first day of going High Raw and to be quite honest it did not start out well.  I kinda had a late night last night.  We went out to a movie and because of construction on the T it took us two hours to get home. For breakfast and lunch today I was supposed to be having a green smoothie with two apples, a banana, some blueberries, and some romaine lettuce.  But getting...
